Inverness is wonderfully placed to access the very best of Scotland's natural larder, being fed from traditional industries of farming, fishing and of course, whisky making. So naturally our menus place great emphasis on this produce, with its natural quality and depth of flavour. Seafood and locally caught fish feature strongly, as do beef, lamb and game. And our restaurant is quite stunning - another elegant testimony to a bygone era. Our hallmark is traditional friendly service combined with exciting contemporary cuisine but without too many twists or novelties - we make classic combinations as good as they can be.
We also believe guests shouldn't pay homage to a plate - they must be allowed to relax and enjoy the whole experience. The personal approach in our restaurant is very important at Ash. Ambience and service play a big part, as we believe that guests have to be in the right frame of mind to enjoy a meal. We are about people as well as product. And although our goal is food that is very exciting and creative, we simply marry simple recipes and methods with fresh ingredients and first class presentation - true 'cuisine naturale' –with a few contemporary twists but doing as little as possible to change the natural character and flavours of the wonderful local produce. Add a list of very good wines carefully chosen to harmonize with the food - followed by a 'Spirit of the North' or two from our extensive and select range of Scottish malts, and you have the perfect recipe for that complete experience.
